So I am back at it with another cake batter recipe. See, I figure I have a whole box of leftover cake mix and why not just put it to good use? Chances are, if you made the cake batter milkshake I made earlier, you have leftover cake mix too. I mean, what kind of person would I be if I left you with practically a whole box of left over cake mix? It’s not like you can drink milkshakes all day. Well, maybe…..

So I am continuing on with a simple recipe for cake batter frosting. Think about all the delicious you can do with this stuff. You can put it on cupcakes or cakes (double the cake flavor!), swirl it in ice cream, eat it by the spoonful, dip pretzels in it, stuff it in a cookie.

The possibilities are freaking endless.

Cake batter frosting is basically the only frosting recipe you will ever need. Sweet, simple, and irresistibly creamy. It is everything. I love to dip my pretzel rods in them for a sweet and salty treat!

When you think about it. Cake batter frosting really kills two birds with one stone. Its cake + frosting all in one at once. It’s genius. And an obvious hit with the kids.

Are you guys playing Pokemon Go? It seems like everyone and their mom is playing it and I am not even entirely sure what it is. I know you have to “catch them all” and it’s something you do outside on your phone. Some kind of weird virtual reality thing? Honestly, I didn’t even know Pokemon was still a thing. I haven’t heard a thing about it since I was in, I don’t know, 6th grade? I wish there was a Doctor Who Go or Harry Potter Go. I’d be all over that in a serious way. I might even give up blogging for the rest of the summer for that. Hashtag priotities. Hashtag worth it. Hashtag I promise to not  do that whole “hashtag” thing again. Hashtag hashtag hashtag. Okay, now I’m done.

Now go make cake batter frosting and eat a spoonful for me!

Cake Batter Frosting

Ingredients
  • ½ cup (1 stick) unsalted butter, room temperature
  • ⅓ cup funfetti dry cake mix
  • 3 cups powdered sugar
  • pinch of salt
  • 1 - 2 tablespoons heavy cream
Instructions
  1. Beat the butter until smooth and cream.
  2. Add the cake mix and beat until well incorporated.
  3. Add the powdered sugar one cup at a time, beating well between each addition.
  4. Mix in the pinch of salt.
  5. Beat in the heavy cream one tablespoon at a time using only as much as needed to reach your desired consistency.
